For the best part most of us want to indulge in the delicacies and flavors we are accustomed to or even stir up memories of delectable delicacies we have savored sometime in the past. Fortunately that is easy since these are the meats that are easily available almost anywhere.

Spicy Chicken Curry
This is a recipe for one kg of chicken and will serve four generously. Ingredients and preparation: 200 gm onions diced, fry in 100 ml of cooking fat, when golden brown add 3 teaspoons of chili powder, one tea spoon of turmeric, coriander powder, a pinch of cinnamon, clove and cardamom.
When blended into a paste add chicken and garnish with a handful of green coriander leave, stir well and cover the container. Let it simmer for 15 minutes and serve hot.
Lamb Stew
This is a recipe that has come down generations and everyone loves to get ingenious with it. All it takes is 500 gm of lamb and 500 gm potato any other vegetables you add is an option that adds flavor. Boil it for 45 minutes and serve. To add some bite, sprinkle some ground pepper and salt to taste.
Kashmiri Chicken
First the whole spices of dried red chili, clove, cinnamon, cardamom get fried on a gentle fire in clarified butter. Next add a teaspoonful of ginger and garlic paste and stir when the aromas blend and hit your nostrils add the chicken and 200 ml of tomato puree, and stir till all is blended in well. Let it cook for 20 minutes on a low flame and a closed container. Serve hot.

Tamarind Chicken Grill
Marinade one kg of chicken in 200 ml of tamarind a table spoon of salt and crushed dry chili. Let it marinade for 30 minutes in the open at room temperature. Set your grill at 200 degrees and for 20 minutes and take out of oven. Garnish with 50 gm of diced green chili and green coriander each and sprinkle a lavish sprinkle of lime to serve hot.
Chicken Stew With Toast
This is really the simplest of all with one kg of chicken set in a pot, add two large sliced onions one carrot 5 cloves of crushed garlic, one inch of crushed ginger, and salt to taste. You can add other vegetables that you like. Add one liter of water and bring to a boil. Served hot with toast on the side is a gourmet meal for anytime of the day.
